So simple and quite possibly the world’s healthiest food. This recipe promotes weight loss. It is vegan and gluten-free. Soak any dried beans overnight for 8-24 hours such as black-eyed beans or chickpeas. Add 2 tbs of grapeseed oil or any cooking oil. Add a 1 inch layer of water to cover the beans before cooking. Purée and liquefy 4 cups of fresh veggies.
You can use onions, garlic, tomato, zucchini, carrot, parsley, pepper, cilantro or whatever else is in the garden. Then add 2 tbs of coriander, 1 tsp of cumin, 1 tsp of turmeric, 1/2 tsp ginger, 1 tsp garlic, 1 tsp of salt and a dash of black pepper. Mix it up and pressure cook on low pressure for 45 min. We use instant pot but you can also slow cook it in crock pot. Serve over rice.
